Chef’s approach to smoking ribs: hot and fast as opposed to low and slow. Using a blend of hickory and a water bath, he smoked the ribs at 225 degrees, explaining that each smoker has its unique quirks. “Consistency is key,” he emphasized, indicating it’s the Southern Pride brand of smokers that ensure every rib meets Q39’s high standards. As the ribs smoked to perfection, Chef shared insights on the art of dry rubbing with Q39 Rib Rub and the importance of the look and feel of the ribs to gauge their doneness.
